When you say eggs, the first though in my head is, Easy! Eggs are easy breakfast and meal options because they can be cooked easily and quickly. While I love all cuisines, being an Indian I am slightly more biased towards our innumerable curry options! I did not eat the eggs, but this curry masala was so good, that I added it to almost all my meals.
Serves 3
Ingredients:
Eggs 6, boiled and shelled
Onions, 2 finely chopped
Tomatoes, 1 large diced
Garlic minced, 1 tsp
Ginger minced, 1 tsp
Curry leaves 10-15 leaves
Black mustard seeds 1 tsp
Oil 2 tbsp
Chilli powder 3 tsp
Coriander powder 1 tsp
Black pepper 1/4 tsp
Turmeric 1/4 tsp
Meat masala (any ready made masala) 1/2 tsp
Salt to taste
Method:

Heat the oil in a pan and add the mustard seeds. Once they splutter, add the onions and cook till they turn slightly brown.

Add the ginger, garlic, curry leaves, all the spices and stir for couple of minutes. Then add tomatoes, a pinch of salt and cook till the tomatoes break down.

Meanwhile make 4 slits in each egg and add it to the above mix.

Add more salt if needed and then cook till the gravy is thick and coats the eggs.

Serve with parathas or rice.
