The staple food of most Indian homes. The humble dal. I usually prefer mixing multiple types of dal together at once, making sure we have different sources and a wide range of our protein source. In my house, we barely use Urad dal for anything else apart from the batter for Idlis, Dosas and Vadas. I was looking for a creamy almost gluggy consistency and decided to use Urad dal here. This is a great source of protein and a main that can be complimented with rotis, rice or just a bowl of salad.
This serves 4
Ingredients:
Masoor dal 1/2 cup
Urad dal 1/2 cup
Spinach 1, cup chopped
Onions 1, chopped
Garlic 3 pods, minced
Ginger 1-2 tsp, minced
Green chilli 2, slit
Cumin seeds 1 tsp
Turmeric powder 1/2 tsp
Salt to taste
Oil 1 tbsp
Method:

Pressure cook the dals in the pressure cooker.

Heat a pan and add 1 tbsp of oil.

Add the cumin seeds and when the splutter, add the chillies, onions, ginger and garlic.

Let the onions brown and then add the turmeric powder.

Add the spinach, and a 1 tsp of salt, stir well and cover it with a lid. Let it cook for 2-3 minutes.

Add the cooked Dals and salt to taste.

Let it simmer for 8-10 minutes.

Garnish with coriander and serve hot.
Serve with Rotis, Rice, Pita or eat by itself!
