Chickpeas and Tofu Tikka Masala

Who doesn’t love a good tikka masala? The chicken tikka masala is a dish that is known all over the world! Indian cuisine is known in most places by this one dish. Of course, we are so much more than that! But it’s safe to say that this high protein dish, is not only healthy but also packed with flavour.

So go ahead and try my Chickpeas and tofu tikka masala, a comforting bowl of goodness!

Calories: Roughly 393 Kcal

Serves 4-6

Ingredients

Marinade:

1/2 pack of firm tofu, thinly cut into strips

1 cup of boiled chickpeas

1/2 cup vegan yogurt or cashew cream

5 garlic cloves, minced

2 inch fresh ginger, grated

2 tsp garam masala

1 tsp turmeric powder

1 tsp cumin

1/2 tsp chilli powder

1 tsp salt

Sauce:

1 onion, finely diced

3 cloves garlic, minced

1 inch fresh ginger, grated

1 1/2 tsp garam masala

1 1/2 tsp cumin

1 tsp turmeric powder

1 tsp coriander powder

1 tsp chilli powder

5 tbsp tomato paste

1 tsp salt

1 can coconut milk

Water to thin if needed

To serve

Fresh coriander leaves

Lime juice

Method

  1. Preheat the oven to 375 degrees and line a baking sheet with parchment.

  2. Press the liquid of the tofu, cut it into thin strips and bake in the oven for 20-30 mins till it is golden brown.

  3. Meanwhile, whisk together the marinade ingredients in a bowl and add the drained and cooked chickpeas tossing until evenly coated. Let it sit for 10 mins.

  4. Heat a skillet on medium heat, add cumin till they splutter. Add and sauté the onion until fragrant, around 2-3 minutes. Add in the ginger, garlic, sauté for one more minute.

  5. Add the spices, garam masala, turmeric, coriander and chilli powder mix to combine with onions for a minute.

  6. Add the tomato paste, coconut milk, salt and whick.

  7. Simmer 5-10 minutes, add in the tofu and chickpeas mixture and then allow it to simmer for 10-15 minutes or until the sauce thickens.

  8. Garnish with chopped coriander leaves and lime juice.

  9. Serve hot with rice or rotis.
