Lo Mein Noodles

What do you do when your grinder and your oven crash on the same day?! You are still in lockdown and there’s no way you can get them repaired! What do you do when you have nothing in your fridge except the scraps of last week’s grocery shopping? You make Lo Mein!

Serves 4

Ingredients:

Sauce:

2 tbsp dark soy sauce

1 tbsp light soy sauce

1 tsp sesame oil

1 tsp sugar

Lo Mein:

200 gms Ramen noodles

1 tbsp sesame oil

2 tbsp mirin/white wine

3 green onions, chopped (separate the white and green parts)

2-3 cups of julienned carrots, cabbage, red bell pepper, mushrooms (You can even add broccoli and bak choy if you have!)

Method:

  1. Mix the ingredients of the sauce together and keep it aside.

  2. Cook the noodles according the package instructions and keep it aside.

  3. Heat a wok and add sesame oil. Add the white parts of the green onions and stir fry till they brown a bit.

  4. Add rest of the vegetables and stir fry till they are tender.

  5. Add the mirin/white wine to the pan. Let it cook for a minute.

  6. Add the noodles and the sauce and coat it well.

  7. You want a slight medium brown colour on your noodles. Gauge the amount of sauce to be used accordingly.

  8. Garnish with the remaining green onions and serve hot!
