Bell peppers! Different colours and different flavours! How do you make a meal of it, without having to add rice or bread to go with it? Stuff and bake! Here is my super easy recipe for baked bell pepper.
Serves 4
Ingredients
Red and yellow bell peppers 6
Potatoes boiled, 3
Cottage cheese or Tofu 1/2 a brick, crumbled
Garlic cloves, 3 minced
Onions 2, finely chopped
Cheddar Cheese, grated 1 cup
Oregano 1 tbsp
Salt to taste
Pepper to taste
Coriander to garnish
Lemon wedges, 12 thinly sliced
Oil 1 tbsp
Method:
Mix together all ingredients except the cheese, coriander, lemon, oil and bell peppers.
Slice the bell peppers in half and take out the stalk and the seeds.
Fill the above mixture into the bell peppers.
Oil a baking pan and put these peppers to bake for 180 degrees for 20 minutes.
Now add the grated cheese on top of the peppers and bake it for a further 5-10 minutes.
Garnish with fresh coriander leaves and lemon wedges and serve hot or cold!
