As a Vegan, the constant effort is to eat healthy and filling food. Living in India, lentils are the easiest and biggest source of protein. And sometimes you don’t want to eat them in a traditional dal rice format. And so, here is my lentil and corn soup. Feel free to add any other vegetables if you want to.
Serves 4
Ingredients:
1 1/2 cup red lentils, cook them
1 tbsp oil
1 medium onion, chopped
2 carrots, peeled and diced
5 cloves of garlic, finely chopped
6 cups of vegetable stock
2/3 cups of corn kernels
2 tsp cumin powder
1/2 tsp chilli powder
Salt to tatse
1 tsp lemon juice
Method:
Heat a pan and add oil followed by the garlic and onions.
Once the onion is caramelized well, add the carrots, cumin, chilli, corn salt, add the stock, cover and cook it till the veggies are cooked.
Stir in the cooked lentils, cook it for 5 minutes and let it cool.
Blend it till it reaches your desired consistency.
Stir in the lemon juice, salt and pepper and serve hot or cold!
