Don’t you think peanut butter makes everything amazing? Even better? When the peanut butter is made at home! If you want to do the same, it’s super simple! Grind roasted peanuts with a bit of peanut oil till the peanuts exude their oil and turn into a butter. So here is a quick, absolutely healthy and extremely tasty curry to go with your grains!
Serves 6
Ingredients:
2 carrots, chopped
1 head of cauliflower, medium sized, cut into florets
1 red pepper, cubed
1 yellow pepper, cubed
1/4 cup peanut butter
4 cloves garlic, minced
1/2 tsp cumin powder
250 ml coconut milk
1/2 cup chopped coriander
Salt to taste
Oil
Method:
Heat oil in a pan, add the garlic, veggies except the bell pepper and cook till they are half done.
Add the bell peppers and cook uncovered and then add the coconut milk, peanut butter, cumin powder, coriander and salt.
And voila! It’s ready! As simple as that!
Serve it on a bed of white, jasmine or brown rice!
