Tofu Saagwala

Love Palak Paneer, but now you are vegan? Don’t you despair! Here’s a little spin to the classic Palak Paneer. Tofu is highly nutritious too. And even if you aren’t a vegan, it’s a great ingredient to add to your list. It’s high in protein, Calcium, Selenium and Phosphorus.

Serves 4

Ingredients:

Spiced Tofu:

Tofu, Pressed and cut into cubes 1.5 cups

Cumin powder 1 tsp

Garam masala 1 tsp

Red chilli powder 1 tsp

Kala Namak a pinch

Salt to taste

Spinach gravy:

Spinach, wash and cut 2 big cups

Soy/almond/coconut milk 1/2 cup

Cashew cream 1/2 cup, Soak cashews for 2 hours and then grind into a paste

Garlic 5 cloves

Ginger 1 inch

Red chilli powder 1 tsp

Tomato 1 medium sized chopped

Garam masala 1/2 tsp

Salt to taste

Oil

Method:

  1. Cover the tofu in the spice mix and crisp it in oil on a pan.

  2. Heat oil in a pan, add garlic and ginger and saute well. Once they are browned well, add the tomatoes and all the other ingredients for the spinach gravy except the garam masala.

  3. Cover it and cook it well. Once it cools, grind it into a smooth paste.

  4. Add this to the tofu and cook on low flame. Add water according to your desired consistency. Add the garam masala powder.

  5. Garnish with coriander, and serve with rotis, brown rice or quinoa!
