Falafel!! This word always brings the sing song voice of vendors selling this in Ko samui to my mind. Yes! A middle eastern dish in Thailand. Late meal post a whole night out. Even if this is the major memory, my first time of eating Falafel was 10 years ago on my trip to Egypt. Super healthy, high in protein and fiber, this can be easily a snack or a main when served with bread, dips and some salad.
This serves 8
Ingredients:
Overnight soaked and cooked chickpeas 4 cups
Onion 2, chopped
Garlic 4-5 pods chopped
Parsley/ Coriander finely chopped 1 cup
Green chilli 3
Cumin powder 3 tsp
Chickpea flour 1 cup (The quantity will depend on the consistency of your final mixture)
Baking soda 1 tsp (To make it fluffy. You can exclude this if you wish to)
Salt and pepper to taste
Method:
Add all the ingredients to the food processor except the chickpea flour and baking soda.
Pulse it, don’t blend. The mixture should resemble coarse sand.
Transfer it into a bowl, add the the flour and baking soda and place in the fridge to chill for 30 minutes to 1 hour.
If you plan to deep fry it, shape them into balls and if you plan on pan frying it or baking it in the oven, shape into into flattened patties.
Fry (deep fry or pan fry) till they are golden brown on the outside.
If you are baking it, bake at 425F for 25-30 minutes, flipping half way through.
Serve it with some Pita bread, Hummus and Baba ghanoush.
