A few days ago, I started craving some Lebanese food. My main memory and reference point to this cuisine is on my trip to Egypt 10 years ago. I was 5 months pregnant and could barely eat anything. My savior were the pita, hummus, salads and a million other sides that every restaurant serves in that part of the world as soon as you seat yourself. Like water is served in India. And by the way, all of that was on the house and absolutely delicious! I would be so full eating it that I would barely eat the meal I had ordered! So, it was time to try and recreate a little bit of that magic. Katzutz is fresh and very easy to make. Almost all the ingredients are easily found in India except for Parsley and I substituted it for Coriander. Red bell pepper isn’t always available, so choose to exclude it if you have to. This can be served with any meal.
This serves 4
Ingredients:
Cucumber 1, chopped with the skin on
Tomatoes 2, chopped
Red onion 1, chopped
Bell pepper 1, (any colour would do) chopped
Coriander and mint, as per your taste, finely chopped
Lemon juice 1 tbsp
Olive oil 1/2 tbsp
Pomegranate seeds (my little twist)
Salt and pepper to taste
Method:
Mix all the ingredients and serve immediately.
If you are planning to serve later, add the salt in the end.
