I don’t cook with Yam often. One of my favourite dishes with it is the Kootu (a south Indian dish) my mom makes. Over a weekend we were supposed to go to a friend’s place for dinner. It was a potluck party and I offered to make some vegetarian/vegan starters. I wasn’t in a mood to go grocery shopping and the Yam on the counter was calling to me. On the go, I tried this Yam patties and let me tell you, it was a huge hit at the party!
Serves 6
Ingredients:
Yam, boiled 1/2 kg
Potatoes, boiled 3 medium
Onion, 1 large finely chopped
Green chillies, 3 minced
Coriander leaves, 1 cup finely chopped
Ginger, 2 tsp minced
Chaat masala 1 1/2 tbsp
Ragi flour or all purpose flour, 1 cup or as much to bind the patties
Bread crumbs 2 cups (or as much to bind the patties)
Salt to taste
Oil to fry
Method:
Mix all the ingredients except the oil, flour and the bread crumbs.
Keep adding the flour till you reach the desired consistency to make patties.
Add breadcrumbs, mix and shape them the way you want, roll them in a thin layer of bread crumbs. Make sure the patties aren’t too thick, or else the Ragi won’t cook.
Heat a pan and add enough oil to coat the surface of it.
Place the patties on the pan making sure there’s enough distance to flip it.
Flip and cook on both sides till they are nice and golden brown.
Serve hot with some green chutney.
